Looking for some inspo for this weekends roast? Then look no further! This slow cooked pork belly in cider with wholegrain mustard mash is simple and a real crowd pleaser!
1. Add 1kg of scored pork belly to a casserole dish with chopped carrot, onion, celery and thyme. Then add 250ml of good quality cider and 250ml of chicken stock. Make sure the pork is just covered (add water if necessary).
2. Cook in your oven at 160 degrees for 3 hours.
3. Transfer your pork belly to a roasting tray, rub some olive oil into the rind and add plenty of salt (best to let the pork belly cool slightly before this process, and coarse sea salt is best!)
4. Crank your oven up to 220 and take out when your crackling is crispy 😋
